Carrageenan (also known as carrageenin) is a natural hydrophilic colloid extracted from red seaweeds including Chondrus, Eucheuma, Gigartina, Hypnea. As a sulfated polysaccharide, it offers outstanding gelling, thickening, stabilizing and water-binding properties. Approved as food additive E407, it is widely used in food, beverage, dairy, meat, confectionery, cosmetics and pharmaceutical industries.
