Konjac powder is naturally low in fat and sugar while rich in dietary fiber. When applied in cold noodle formulations, it enables significant calorie reduction without compromising texture. A 246 g serving of konjac cold noodles can achieve a solid content of ≥65%, with the solid portion providing approximately 28 kcal, making it suitable for weight management, light meals, and everyday healthy diets.
