| Brand Name | YIZ KONJAC |
| Model Number | Kappa,Iota,Lambda |
This food grade Lambda Carrageenan (E407) is extracted from natural red seaweed, specially tailored for strawberry jam, low-sugar fruit preserves, fruit spreads and berry fillings. It is a non-gelling hydrocolloid with outstanding acid tolerance, ideal for acidic strawberry pulp systems. It effectively controls free water migration, inhibits syneresis (water bleeding), suspends strawberry fruit particles evenly, delivers smooth, creamy spreadable texture without forming hard gel, keeps consistent viscosity during sterilization and long shelf storage.

Main Application: Strawberry jam, low sugar berry preserves, fruit spread, bakery fruit filling, mixed berry jam.
Addition Method: Premix Lambda carrageenan with sugar powder to avoid agglomeration. Add slowly into stirring strawberry pulp mixture, heat to 70~85℃ for full hydration, continue stirring, then proceed with homogenization and sterilization process. Can be combined with pectin for better texture.

A1: Lambda carrageenan is non-gelling, only provides thickening. It will not form hard gel, ideal for spreadable jam. Kappa forms firm gel, not suitable for jam spread. Lambda performs well in acidic strawberry pulp and prevents water separation.
A2: Recommended dosage range 0.10~0.30%. Exact usage depends on sugar content, pH, fruit solid content and target viscosity of your strawberry jam.
A3: Yes, it has good heat and acid stability. Properly hydrated lambda carrageenan retains viscosity after thermal sterilization, avoiding viscosity drop after processing.
A4: Yes, compatible with pectin. Combined usage helps improve suspension effect and reduce syneresis for low sugar jam systems.
